Polish Beets Salad
More beets, please!:) They are delicious and beneficial for a human’s body. This is the vegetable root everyone should love. People in Poland eat lots of beets. Who hasn’t heard of barszcz (or borscht)?!
In most cases, beets are a great addition to anyone’s diet. I know, this isn’t news, right? So, let’s eat beets!:)
Today, I would like to convince you to make a beet salad. It’s great with any meal, especially with meat. Believe me, the combination of all ingredients really work together. Remember, any recipe is adjustable. If you don’t like garlic, for example, the salad will still be great without it. I made three versions of the same beets salad recently. All were good.
The salad could taste the most exotic for some palates if it includes only beets, cucumbers in brine, garlic and parsley.
The version with addition of apple, onion, fresh dill instead of parsley and less garlic is probably the crowd pleaser.
The one with apple added, less onion and no garlic could be even kid friendly.
Choose your option or play with the ingredients. This salad is easy to make and delicious:). It’s best when chilled and served a few hours after preparing.
Ingredients / 4-6 servings
¾ lb, 3 medium size beets
4-5 cucumbers in brine, cut in tiny squares, I thought it’s better way than shredding
1 large apple
½ small onion, chopped
1 garlic clove, knife- minced, optional
Salt, pepper
Sugar
1 tsp lemon juice
1-2 tsp olive oil
1 tbsp or more fresh dill or parsley, optional
Preparation:
- Clean beets thoroughly. Leave them unpeeled to cook. You can boil, roast/bake or steam them. It takes about one hour to cook a beet. Let them cool completely before removing the skin. Shred them using a coarse size grater.
- Peel, core and shred apple, too.
- In a mixing bowl, add beets, cucumbers, apple, onion, and garlic if using. Sprinkle it with lemon juice. Add salt and pepper to taste, also a dash of sugar and extra virgin olive oil. Don’t forget the fresh herbs.
- Mix everything very well. Refrigerate until ready to serve.
