Dumplings with Plums

These are simple dumplings made with potato, flour and egg stuffed with fruit and boiled in water until tender. Serve sweet with breadcrumbs fried in butter. Add a splash of sweet cream, sugar and enjoy.

Ingredients:

2.2 lbs boiled potatoes, cooled
2 medium eggs
2 lbs plums, washed, dried and pitted
2 cups flour
2 lbs potato starch flour
1 pinch of salt + 1 tsp for adding to the pot

Preparation:

  • It is best to grind the boiled potatoes or pass it through a press while still slightly warm.
  • Add the rest of the ingredients to the bowl with the ground potatoes: eggs, both flours and a pinch of salt. Mix everything well. There should be no lumps.
  • Place the dough for the dumplings on a floured board. Roll them out with your hands into a string about 4 inches thick. Use a knife to cut neat pieces about 2 inches long. Flatten each piece in your hand. Place the washed, pitted and slightly dried plums in the center – one plum per one piece of dough. Then bind the edges well. Form a neat ball in your hands. Prepare all the dumplings this way.
  • Boil water in a large pot. Salt it with a spoonful of salt when it starts to boil. Dip the dumplings in boiling water. Immediately stir the noodles lightly and carefully. After the dumplings are on the top, wait another 4 minutes. Scoop out all the dumplings, and let the excess water drain out. Serve immediately.
